White Bean and Asparagus Wrap

Going meatless doesn’t mean that all you eat is cheese and potato chips, contrary to what so many of my college roommates thought. One of my old friends decided to become a vegetarian and made ‘nachos’ in the microwave, every day, with potato chips and cheddar cheese. After she took them out of the microwave, she covered the plate with salsa, which was, for many months, the only thing she ate that could be considered, even remotely, a vegetable.

Oh, if only I could have introduced her to flatbread, or, at the very least, white bean purée. The poor thing could have eaten some protein and fiber, too, instead of those greasy, nuked chips slathered in cheese. We can only hope that she has broadened her diet somewhat, or maybe that she has incorporated more vegetables into those nachos she loved so much.

If you are reading this, old roomie, please buy some flatbread! Please bake some chips in the oven and make your own nachos using delicious beans and roasted vegetables! Read this month’s fabulous meatless recipes, and make them for yourself and your family! Make this recipe, too, using tender first of the season asparagus and a white bean purée you can make yourself, in no time. No microwave required. And this recipe has more real vegetables than salsa. There’s a whole world of delicious vegetables for us omnivores to try. And this Tuscan inspired white bean recipe is way better than microwaved potato chip nachos, hands down.

The surprise zing this flatbread recipe has comes from my favorite pickled red onions made a little bit in advance and stored in your refrigerator to add to almost everything. The vinegar tones down the onions somewhat and cuts back on the lingering flavor of raw onion in your mouth the rest of the day. The delicious crunch of the onions add a lot to this flatbread wrap, as you will soon discover.

Aunt Sue’s Artichoke Dip with Flatbread Crackers

Everyone has a secret weapon recipe that has been passed down, generation to generation, mother to daughter, grandmother to granddaughter, aunt to niece, kept hidden in the back of their personal repertoire of successful secret weapon recipes. It’s usually brought out for our special occasions, met with lots of oohs and ahs, and is requested every year by its loyal fans. (Someday, maybe one of these flatbread recipes will be one of those closely guarded treasures, in fact, maybe this one…)

The historian in me celebrates these special recipes as a beautiful, time worn way families, especially women, pass down their history through the years. But the spy in me wants to know ALL the secret recipes, from every family ever, and put them in a big book. I simply must have all the recipes! What a cookbook that would make!

Well, because ya’ gotta give to get, I’m sharing one of my secret weapon recipes with you, adapted, of course, for using my favorite flatbread. These are modern times, after all, and in modern times, we don’t lean as heavily on mayonnaise (or scotch) as we used to. This recipe for warm gooey artichoke dip is too delicious to change, so the flatbread chips level the dietary playing field a bit, allowing you to celebrate your new secret weapon recipe with a minimum of guilt. Furthermore, I’m giving you the full authority to name this artichoke dip after anyone you care deeply about. And, well, I wouldn’t say no if you decided to share one of your own recipes, either.

When you make your dear Aunt Sally’s/Dinah’s/Carol’s dip, be sure to make some extra flatbread chips, too, so that your guests can scrape every last bit up. They’re easy, quick, and are the perfect thing to scoop up every tender morsel of artichoke.

Beef, Mint, & Cucumber Salad Wrap

The recent pop of warm weather got me thinking that I wasn’t anywhere near ready, mentally or physically, to change out our closets and put away all the winter clothes. So naturally, I revisited my eating habits, and vowed to make a delicious salad, and drink way more water, every day this week. Would I be able to do it? Would my better half? The challenge is on!

Yes, spring often means more salads in our daily diets, and to some, like my better half, that’s not always the ideal lunch. But this salad flatbread wrap, amazingly, is one of his favorites, probably because of the thick slices of beef in it, which satisfies his inner caveman’s carnivorous urges. Based on a spicy beef and cucumber salad we both love at one of our favorite Thai places, making it for lunch or dinner at home or for work makes a homemade meal exciting and healthy at the same time.

The other nice part about this flatbread wrap is the addition of mint. Mint is a harbinger of spring and is fabulous in salads; it brightens up savory dishes in an extraordinary way. It makes a big impact in this salad, as do the cucumbers, cooling your mouth down in between bites of salty, briny, spicy steak.

If you have some leftover flank steak from the night before, or an extra kebab from a grilled dinner, or even the too-good-to-miss leftovers from a steak dinner, this flatbread wrap is a great way to switch it up and make something thrilling for your next meal. It doesn’t need to be a fancy, expensive cut of meat to be delicious in the flatbread. Just grill it up and slice it thin to absorb all the sauce.

Make this flatbread wrap for the salad “lover” in your life, and everyone will be happy you did. And throw a sprig of mint in your water, too, while you’re at it-delicious!
