Spicy Egg Salad Sandwich
Ingredients
- 1 Everything Flatout flatbread
- 1 hardboiled egg
- 1 tablespoon red onion, diced
- 1 teaspoon raw pepitas
- 2-3 sprigs cilantro
- 4-5 pickled jalapeño slices (plus extra slices for garnish)
- 2 tablespoons mayonnaise
- 1 teaspoon spicy mustard
- Salt and pepper to taste
- Avocado slices
- chipotle powder
Directions
To make the salad: Peel shell off hardboiled eggs, then cut the egg into chunky pieces. Place in a mixing bowl, then add in red onion, pepitas, cilantro, and pickled jalapeños. Mix well. Fold in mayo and mustard until combined.
To assemble: On one side of Flatout flatbread place cilantro and avocado slices. Scoop the egg salad mixture on top of avocado slices. Sprinkle lightly with chipotle powder, and garnish with more jalapeño slices if you enjoy your salad a little more spicy. Fold other half of Flatout over the egg salad. Enjoy!
