Leftover Lamb Meatball Flatbread
Ingredients
- 1 Flatout Flatbread wrap
- 4 lamb meatballs, broken up
- 1 tablespoon olive oil
- 1 tablespoon small red onion, thinly sliced
- 5 cherry tomatoes, quartered
- 1/8 cucumber, chopped
- 1 tablespoon crumbed feta cheese
- 1 tablespoon mint, chopped
- ¼ cup premade Tzatziki sauce
- Mint for garish
Directions
Preheat oven to 375°F. Spray baking tray with nonstick cook spray. Place flatbread on the tray and cook for 2-3 minutes, until lightly toasted. Top with lamb meatballs, red onion, cherry tomatoes, cucumber, and feta cheese. Spoon tzatziki generously over the top of the flatbread. Garnish with fresh mint and pinch of salt.
