Easy Smoked Salmon Breakfast Wrap
- Cooking spray
- 2 eggs
- Freshly ground black pepper to taste
- 1 Flatout Light Original flatbread
- 2 tablespoons Weight Watchers Reduced Fat Chive and Onion Cream Cheese
- ¼ cup baby spinach
- 5 thin tomato slices
- 2 ounces reduced-sodium smoked salmon
- 2 tablespoons thinly sliced scallions
- 1 teaspoon capers
1.In a small nonstick skillet coated with cooking spray, scramble eggs until just set and fluffy. Season with pepper.
2.Set aside briefly, keeping eggs warm. Meanwhile, lay flatbread on work surface, and spread with cream cheese; leave a very thin outer border uncoated.
3.Top with spinach, tomato, scrambled egg, smoked salmon, scallions, andcapers. Layer ingredients in middle of flatbread, lengthwise, not placing them too close to the sides.
4.Fold in the cream-cheese-coated long sides of the flatbread so they overlap in the middle to enclose the filling; secure with toothpicks, if needed. Cut in half, and serve immediately.
