If you’re blessed with leftover barbecue and don’t know what to do, don’t just eat it cold out of the refrigerator! Try making a flatbread pizza to really stretch every last drop of smoky, delicious flavor. A handful of pulled pork, burnt ends, or brisket can be turned into another glorious meal when used creatively. Got a little slaw? Throw it on! How about some collard greens? They’re good too! We beefed up our barbecue flatbreads with some crumbled bacon, crisp red onion, and shredded mozzarella, and even sipped on a shot of our favorite bourbon to get the party started. The bourbon is optional, but flatbread isn’t! What else could make use of leftovers so ingeniously? Our video shows you how to do it:

BBQ, Bacon (& Bourbon!) Pizza

Ingredients

  • 1 or 2 Flatout Artisan Thin Pizza Crusts (we used Spicy Italian and Rustic White)
  • 1 cup pulled pork
  • 1 cup brisket, burnt ends, or bbq beef
  • 1/2 cooked crispy bacon, crumbled
  • 1/2 cup cole slaw
  • 1/2 cooked collard greens
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced red onions
  • 1/2 each of your two favorite sauces

Directions

Preheat oven to 350°F. Place Flatout flatbreads on a cookie sheet. Bake at 350°F for two minutes. Remove from the oven, and spread the BBQ sauces over each of the flatbreads, then scatter the cheese, pork, and beef evenly over each flatbread. Next, it’s time to sprinkle the crumbled bacon over both. Bake for four minutes, (this is where that bourbon comes in!) remove from oven, then arrange the cole slaw, collard greens, onion, and a drizzle of extra sauce over each and cut into slices. Cheers!
