Chopped Turkey Salad Wrap

Chop chop! No time to lose! Lunch beckons, but so does work, and there are a few days in the week when I simply must lunch at my desk. Stupid deadlines! Budget or not, I just can’t sidle up to the fancy salad bar down at the end of my block. Even if I have a coupon. Even if I found twenty bucks in the dryer that morning. Even if my better half said it wasn’t his. No, not even then. HP and Dell are my lunch companions all day, and they make for pretty boring company after the rest of the office has left. Thank goodness there’s second breakfast, or as many people prefer to call it: lunch.

My stomach starts growling as soon as the noon hour hits, doesn’t yours? Bring this to work with you and this turkey chopped salad wrap will come in real handy exactly at 12:01. It’s a little more labor intensive than some, in terms of advance preparation, but chopping up most of the ingredients, especially the spinach, means that you can pack more great for you greens into your flatbread, and that means more vitamins and energy for the day ahead.

If you are worried about sogginess when you travel to work with your lunch, then make this flatbread wrap without dressing and pack it separately, dipping as you go, it’s just as easy. The more you chop everything up, the smaller it gets, so you may have to add more spinach as you go, depending on your chops.

Again, and this is why I love Flatout, you can change up the ingredients to suit your taste and what you already have stocked in your kitchen. A few cherry tomatoes thrown in aren’t going to matter a bit. And be sure to ask the deli angel to cut the turkey into one thick slab for you so you can cube it up later, he or she will thank you for it. Spicy Tuna Salad Wrap

This tuna salad flatbread wrap has become a favorite of my better half’s, and it came to be purely by mistake. Well, let me explain, all the ingredients did not fall out of the refrigerator and land on a flatbread, we put them there, but this wrap was the result of, shall we say, celebrating a little too much one night and coming home in the wee hours famished, needing food RIGHT THEN.

Okay. My better half has strong opinions about pimento cheese. He puts it on everything. Not just celery. Not just crackers. Sometimes I think he’d marry it, if our state allowed marrying food. Me, not so much. So while he went straight for the P.C. I, on the other hand, reached in the refrigerator for some tuna salad and our last flatbread, slapping it on the counter. When my back was turned, as I continued to browse my options, my better half had spread the pimento cheese all over my flatbread. He thought it was for him! My eyes got really, really wide. Oh no! My lip began to quiver.

We were stronger than this. We could survive anything, right? He decided he had to get creative; instead of scraping it off, he suggested we compromise and make something new. Why not add the tuna salad to the already besmirched flatbread? Um, okay, I guess. And, hey, while we’re at it, why not some of these pickled jalapeños from last night’s nachos? Yeah, why not? And then, probably because I was feeling guilty or craving water, we added some shredded iceberg lettuce for a little crunch. We had to hydrate, after all. Things got a little crazy that night.

If it was horrible, well then, we’d go to bed without snacking. We cut the flatbread in half, brought it to our lips simultaneously and each took a bite. But then the strangest thing happened- it was delicious! I mean, really good. We ate every last bite. We were both sorry we had to split it, it was that satisfying. The better half made it again the next day when we got home from the store, just to see if it was as good as before, in our late night condition. Oh, lord, it was! Spicy, creamy, crunchy, tuna-y, and totally a happy accident. Or destiny, like the two of us!

Spicy Black Bean Dip with Flatout Chips

Whether it’s a casual get-together or a special event, celebrations tend to revolve around food. If you have diabetes, this can add on a layer of stress to any social situation. Being unsure of what you can eat without having a negative impact on blood sugar levels may lead to you avoiding some of your favorite menu options. Finger foods and appetizers can often seem off limits, but they don’t have to be. By using Flatout Flatbread, you can create fiber-rich, reduced carbohydrate snack chips that can be enjoyed with any dip, such as this spicy black bean dip recipe. Having a lower carbohydrate appetizer option available allows you more freedom with your food selection throughout the remainder of the event.

Holy frijoles! Does Mexican food make you drool with excitement, like I do? Not only is it so totally satisfying, but it’s also a very nostalgic cuisine for this writer, who ate beans almost every night after class. There was this little Mexican place with a home made salsa bar in my college town, and many nights, I’d order bean dip and chips (I think it was under $1) and load my dip up with salsa from the bar and have that with the chips for dinner. Everyone who worked there, embarrassingly, knew my face, and exactly what I would order.

Now that I’m no longer a college kid, when we eat Mexican out, so many times we load up on tons of cheese and extras that push us over the edge of what we can comfortably handle. Resulting in, and I can speak from experience here, massive food guilt. I would have been just as happy with chips and dip! Oh, okay, a margarita, too. Who am I kidding?

Beans are a great way to get protein and fiber, and they are so inexpensive and easy to prepare if you have a few hours, or even a slowcooker. They’re not just for college kids anymore; sometimes they’re for post grads with student loans, or for that certain someone (me) who has resolved to go meatless 3 days a week. How fun would it be to pack along a homemade bean dip with chips you make in the oven with Flatout flatbread?

There’s a whole world of beautiful heirloom beans out there, too, besides the pintos and the navys. and with a little online searching, I’ve been able to find some great heirloom varieties that would also work well in this recipe. For this dip, I’m using black beans for popularity’s sake, but if you have other beans, fresh or canned, by all means use them. Make sure you watch the sodium levels in any canned bean you buy, and rinse them thoroughly before using.

And about the flatbread: if you’d like to brush each flatbread with a little olive oil or lime juice and dust with a sprinkle of chile powder before baking, go right ahead. It all depends on your preferred level of spice and how heartily you can fend off your coworkers advances when lunchtime arrives, as you are contentedly snacking away. Next week, you might have to bring a double recipe.

No Batter Chocolate Hazelnut Crêpe
