One of our favorite bloggers, Oriana Romero from Mommyhood’s Diary, shares her new, soon to be famous recipe for a flatbread wrap perfect for picnics, school lunches, and road trips. She named it the Reina Pepiada wrap, after one of the most popular arepas in Venezuela. It’s loaded with avocado, shredded chicken and a little mayonnaise, so what’s not to love about that? Grab your closest flatbread and get wrapping!

Loaded Reina Pepiada Wraps

Ingredients

  • 1 Flatout Flatbread (I used original)
  • ¼ ripe avocado, peeled and chopped
  • 1 tablespoon onion, finely chopped
  • ¼ cup mayonnaise
  • Black pepper, to taste (I added about ¼ teaspoon)
  • ½ cup cooked chicken, shredded
  • 1 large Romaine lettuce leaf
  • ¼ tomato, finely sliced

Directions

Add avocado, onion, mayonnaise, and pepper into the bowl of your food processor and process until pureed and smooth.

In a small bowl, mix mayonnaise/avocado mixture and shredded chicken, until well combined. Set aside.

Spoon and spread mayo/avocado/chicken mixture on center of flatbread. Top with 1 lettuce leaf and tomatoes slices, roll tightly, cut in half, and enjoy.
