Chicken Avocado Sandwich

Chicken Avocado Sandwich
Ingredients
- 2 Flatout Foldit flatbreads
- 2 tablespoons onion
- ½ carrot, peeled
- ½ stalk celery
- 1 pound chicken breasts with skin and bone
- 1 ½ tablespoons mayonnaise
- ½ tablespoon sesame seeds, optional
- mustard, to taste
- salt and pepper
- 1 ripe avocado
Directions
In a medium saucepan place chicken breasts, onion, carrot, celery, salt and pepper, then add enough water to cover.
Cook over high heat until boil. Lower heat and simmer gently for 15-20 minutes, until chicken is cooked.
Turn off heat and let cool completely.
Remove the skin and bone from chicken breasts. Cut into small cubes. Save broth.
Place chopped chicken in a bowl, mayonnaise, salt, pepper, sesame seeds and 1/4-1/2 cup of broth, stir well. Taste and adjust the seasoning.
Just before serving, toast or warm the Foldits.
Cut the avocado in half and remove the pit. Spoon out the avocado flesh onto a cutting board and slice thin; season with salt.
Place the chicken salad and sliced avocado on warm flatbread. Fold in half and enjoy.
