Sweet Quesadillas
Ingredients
- 2 Flatout Light Original flatbreads
- 1 egg, beaten
- 1 tablespoon peanut butter
- ½ Banana, sliced
- 3-4 strawberries, sliced
- 1 tablespoon marshmallow spread
- 2 tablespoons mini chocolate chips
- 2 tablespoons whipped cream
- 1 teaspoon chocolate sauce
- Non-stick cooking spray
Directions
Whisk egg in small bowl. Brush the edges of flatbread with egg wash. Spray a frying pan with non-stick oil and heat on medium to low heat.
Spread half of flatbread with marshmallow spread, then add banana and 1 tablespoon of the chocolate chips. Fold, pressing edges shut. On the next flatbread, repeat the egg wash, then spread the peanut butter on the flatbread, top with banana slices, strawberry slices, and 1 tablespoon of the chocolate chips. Fold, pressing edges shut. Cook flatbread quesadillas in the pan, flipping after 5 minutes or until the flatbread is toasty and the chocolate is melted. Remove from the pan, and top with whipped cream and chocolate sauce. Cut into six slices to share and serve immediately.

Took a bit of getting use to but now I use them in place of bread. Am on a low carb diet to lower blood sugar & always keep some in the freezer. The light original have 15 g of carb , 8 g of fiber & no sugar….can’t beat that & they are so filling
A favorite Weight Watchers recipe from the 70’s – add stevia to ricotta cheese to taste, add vanilla. Spread on flatbread. Top with pineapple slice, sprinkle with cinnamon and put under broiler till hot and bubbly. A danish without the calories.
