- 1 Flatout Flatbread of your choice
- 1 cup raw sweet potato, grated
- 1/2 cup black beans, cooked
- 1/2 cup brown rice, cooked
- 1/3 avocado, sliced
- 3 tablespoons salsa verde
- 2 tablespoons chopped cilantro
- 1/4 cup red cabbage, sliced thin
- 1/2 teaspoon ground cumin
- 1/2 lime, juiced
- Olive oil
- Salt and freshly ground pepper
In a pan, sauté sweet potato in 1 teaspoon of olive oil, stirring frequently, adding more oil if needed. When potato is tender, add cumin, beans, and rice, stir until combined, then add salsa verde and heat, stirring, until mixture is blended and hot.
To assemble the wrap, scoop potato rice mixture onto flatbread, then layer on the raw cabbage, cilantro, and avocado. Finish with lime juice and a sprinkle of salt. Roll up and cut in half.
