Spanish Tapas Pizza

Ingredients

  • 1 Flatout Artisan Thin Pizza Crust
  • olive oil
  • 1/2 cup manchego or asadero cheese, shredded
  • 2 ounces chorizo, cooked and drained
  • 2 tablespoons black olives
  • 1/4 cup roasted red bell peppers
  • Handful of spinach leaves, stems cut off

Directions

Heat grill to medium heat.
Brush olive oil on one side of crust. Place flatbread on grill and brush other side with olive oil.
Cook until the flatbread starts to bubble up and grill marks form, about 1-2 minutes.

Carefully transfer flatbread from the grill and onto a cookie sheet, grilled side up. Add cheese, chorizo, roasted red bell peppers, olives and spinach. Return to grill and let cook for one
minute then move flatbread over to indirect heat, cover and let cheese melt.
