“Man cannot live on pizza alone” said no man, ever, in the course of history. Truly, how many of you have someone in their lives who could eat pizza for every meal? I can count several major, heavy duty pizza lovers in mine, without even trying all that hard. This recipe goes out to all you pizza lovers out there, as well as to those who cook for them, wondering how they can change it up every now and then with some flatbread, fresh vegetables, and healthier ingredients.

Part of our meatless recipe selection, this flatbread panini has all the flavors under the Mediterranean sun: Kalamata olives, sundried tomatoes, garlic, olive oil, and spinach all melted into a Foldit flatbread with mozzarella cheese. If blindfolded, your pizza lover will think you had ordered their favorite slice and folded it in half for easier eating. Then they will thank you, hopefully, for feeding them a meal the ingredients in which have been known to promote greater longevity in people for thousands of years.

In all reality, they will eat it, enjoying every salty, crispy bite, and secretly wish for another slice of whatever-it-is that you were kind enough to make them.

Mediterranean Sun Foldit

Ingredients

  • 1 Flatout Foldit or Hungry Girl of your choice
  • 1 tablespoon sun dried tomato tapenade
  • 1-2 ounces fresh mozzarella cheese, sliced
  • 4 Kalamata olives, pitted
  • Large handful fresh spinach
  • 1 clove garlic, minced
  • Olive oil
  • Salt and freshly ground pepper

Directions

In a pan, sauté the spinach with the garlic in a small amount of olive oil until barely wilted. Remove from heat and set aside.

To assemble the Foldit, spread the sun dried tomato tapenade over the flatbread, then layer spinach, olives, and finally mozzarella. Fold in half and cook in panini press until cheese is melted and sandwich is hot.
