When we were driving across the country to spend the holidays with my family, we hit a bit of a snowstorm, so my boyfriend and I stopped in to this little college town hole in the wall to grab a bite to eat on the road. We weren’t stuffed with holiday food just yet, and for some reason all the driving made us famished, so we were happy to find this warm and cozy little diner out in the middle of nowhere. Because we weren’t in any particular hurry, we made a little date out of it, snuggled in a booth, with Elvis’ Blue Christmas playing on the jukebox in the corner.

We ordered two of their daily specials, and were so thankful we did, because soon enough this mouth watering, pub style chicken sandwich with bacon, melted cheddar, and stone ground mustard appeared. The sandwich also had just a bit of sweetness, from a locally made maple glazed bacon, which made it absolutely perfect. We devoured every bite, licking our fingers afterwards. What a way to start the holidays, just the two of us, in this quiet little family run place, with a warm, completely delicious sandwich. And the first thing I did when I got home, after all the hustle and bustle died down? I recreated the sandwich I couldn’t stop thinking about, of course! But with a twist, as a wrap, using my favorite Flatout Flatbread. And oh, what a wrap it was!

Because sometimes even little changes to a recipe can make a really indulgent thing a little bit healthier for you. And sometimes nothing else but a hot roasted chicken sandwich with crisp, sweet bacon, and gooey cheddar will do. It’s snowing like crazy outside, all the after work chores are done, and a salad certainly isn’t on the menu. I can’t think of a better way to recreate that perfect moment the two of us shared, only this time with a glass of that Stout in the refrigerator. And perhaps a fire. And Elvis. But I digress….

Of course, if you have some of that special maple glazed bacon, use it, by all means, but a drizzle of maple syrup in with the mustard does the trick, too. So grab that Flatout Flatbread, turn on the oven, melt some cheese, and celebrate hibernation (at least) one more time! Your boyfriend will thank you.
