Shrimp Salad Foldit inspired by Tomatte Crevette
Ingredients
- 2 Flatout Foldits
- ½ cup tiny shrimp (canned is fine)
- 1 tablespoon diced red onion
- 1 tablespoon diced celery
- 1 teaspoon lime juice
- 1 teaspoon red wine vinegar
- ½ teaspoon sugar
- ¼ cup mayonnaise
- ¼ teaspoon Old Bay seafood seasoning
- ½ teaspoon fresh dill
- 1 tomato, sliced
- (NOTE – I made this recipe more or less from Epicurious and then roughly quartered it)
- OR
- 1/2 cup prepared shrimp salad
- 1 tomato, sliced
Directions
In a bowl, mix together shrimp, red onion and celery. In another bowl, combine lime juice, vinegar, sugar, mayonnaise, seasoning and dill. Whisk together until fully incorporated. Toss the shrimp and vegetable mixture with the dressing. Scoop onto Flatout Foldit. Top with sliced tomatoes.
