Chop chop! No time to lose! Lunch beckons, but so does work, and there are a few days in the week when I simply must lunch at my desk. Stupid deadlines! Budget or not, I just can’t sidle up to the fancy salad bar down at the end of my block. Even if I have a coupon. Even if I found twenty bucks in the dryer that morning. Even if my better half said it wasn’t his. No, not even then. HP and Dell are my lunch companions all day, and they make for pretty boring company after the rest of the office has left. Thank goodness there’s second breakfast, or as many people prefer to call it: lunch.
My stomach starts growling as soon as the noon hour hits, doesn’t yours? Bring this to work with you and this turkey chopped salad wrap will come in real handy exactly at 12:01. It’s a little more labor intensive than some, in terms of advance preparation, but chopping up most of the ingredients, especially the spinach, means that you can pack more great for you greens into your flatbread, and that means more vitamins and energy for the day ahead.
If you are worried about sogginess when you travel to work with your lunch, then make this flatbread wrap without dressing and pack it separately, dipping as you go, it’s just as easy. The more you chop everything up, the smaller it gets, so you may have to add more spinach as you go, depending on your chops.

Chopped Turkey Salad Wrap
Ingredients
- 1 Flatout Flatbread
- 4 ounces turkey breast, chopped in cubes
- Small handful cooked chickpeas, (canned okay, rinsed)
- Small handful shredded mozzarella cheese
- 2-3 handfuls baby spinach
- 5-6 seedless grapes, cut in half
- 1 tablespoon slivered almonds
- 2 tablespoon poppyseed dressing
- Salt and freshly ground pepper
Directions
Find a cutting board, a chef’s knife, and a large bowl. Beginning with baby spinach, chop it up on the board until it is in small pieces. The spinach will shrink in volume with chopping, so you may need to add more. Add it to the bowl. Then roughly chop the chickpeas and add them to the bowl with the turkey, grapes, mozzarella, and almonds. Toss all ingredients in the poppyseed dressing, season with salt and fresh pepper to taste, and find your favorite Flatout flatbread. Roll the chopped salad up into the flatbread, beginning at the rounded end. Cut in half.
